Homemade Finger Chips (French Fries) Recipe

Ingredients:
- 4 large potatoes
- Salt (to taste)
- Water (for soaking)
- Oil (for deep frying)
- Optional spices: black pepper, red chili powder, chaat masala, paprika, garlic powder

Preparation:
- Peel and Cut:
- Peel the potatoes and cut them into long sticks (about ½-inch thick).
- Try to keep them uniform in size for even frying.
- Soak:
- Soak the cut potatoes in cold water for at least 30 minutes.
- This removes excess starch and helps make them crispier.
- Rinse and Dry:
- Rinse the potatoes well and pat them dry with a kitchen towel. Any moisture will cause oil splattering.

Two-Step Frying Method (for Extra Crispiness):
- First Fry (Blanching):
- Heat oil to about 150°C (300°F).
- Fry the potato sticks in batches for 4–5 minutes. They should be soft but not browned.
- Remove and drain on paper towels. Let them cool completely.
- Second Fry (Crisping):
- Increase the oil temperature to 180°C (350°F).
- Fry the pre-cooked fries again until golden and crispy (about 2–3 minutes).
- Remove and drain excess oil.
- Season:
- Toss the hot fries with salt and your favorite seasonings while they’re still hot
Serving Suggestions:
- Serve with ketchup, mayonnaise, cheese dip, or garlic aioli.
- For a desi twist, sprinkle with chaat masala or peri-peri spice mix.
