Potato Poha (also called Aloo Poha) is a popular Indian breakfast dish made with flattened rice (poha), potatoes, and a blend of spices. It’s light, flavorful, and super comforting.

Potato Poha (Aloo Poha) Recipe
Ingredients:
- 1 cup poha (flattened rice – medium or thick)
- 1 medium potato, peeled & diced small
- 1 small onion, finely chopped (optional but recommended)
- 1-2 green chilies, finely chopped
- 8-10 curry leaves
- 1/2 tsp mustard seeds
- 1/4 tsp turmeric powder
- Salt, to taste
- 1 tsp sugar (optional)
- 2 tsp oil
- Juice of 1/2 lemon
- 2 tbsp fresh coriander leaves, chopped
- Roasted peanuts (optional, but adds crunch)
Instructions:
- Wash the Poha:
- Rinse the poha in a sieve under running water until it softens. Don’t over-soak. Drain and set aside.
- Prep the Potatoes:
- Heat oil in a pan.
- Add mustard seeds. When they splutter, add curry leaves and green chilies.
- Add diced potatoes and cook till they’re soft and slightly golden.
- Add Turmeric & Poha:
- Add turmeric and give it a stir.
- Add the soaked poha, salt, and sugar. Mix gently so it doesn’t break.
- Steam for a Minute:
- Cover and let it cook on low heat for 1–2 minutes so flavors blend.
- Final Touch:
- Turn off the heat. Squeeze lemon juice, add chopped coriander, and mix.
- Top with Roasted Peanuts (if using) before serving.
