**For the Batter:**  

- 1 cup gram flour (besan)  

- ¼ tsp turmeric  

- ¼ tsp red chili powder  

- Salt to taste  

- Water (to make a medium-thick batter)  


**Other:**  

- Pav (soft bread rolls)  

- Dry garlic chutney / green chutney / tamarind chutney  

- Fried green chilies (optional)  

- Oil (for deep frying)

1. **Make the potato filling:**  

   - Heat oil, add mustard seeds, let them crackle.  

   - Add green chili, ginger, garlic, curry leaves → sautรฉ.  

   - Add turmeric and mashed potatoes. Mix well, season with salt, and finish with coriander leaves.  

   - Cool, then shape into round balls.  


2. **Make the batter:**  

   - Mix besan, turmeric, chili powder, and salt with water to make a smooth, thick batter.  


3. **Fry the vadas:**  

   - Dip each potato ball in batter, coat evenly, and deep fry till golden.  


4. **Assemble the Vada Pav:**  

   - Slice pav, spread chutneys (green, tamarind, or dry garlic).  

   - Place one hot vada inside.  

   - Serve with fried green chili on the side.
